Oh, Lesley, our dear friend! She's the kind of person who can turn a regular night into a magical one. You know what I mean? We're talking quality time, belly laughs, and of course, her famous bruschetta! It's like every bite is a burst of flavor and every moment with her is a delight. It's no wonder we keep coming back for more - we can't resist her charm and her bruschetta! And let's not forget the wine - a glass (or two) of vino with Lesley's bruschetta is the perfect recipe for a fantastic evening. Cheers to Lesley and her magical bruschetta!


Time: 20 mins | Serves: 2 - 4

INGREDIENTS

3 tomatoes (whatever is in season and diced)

½ lemon

2 cloves of garlic

1-2 tablespoons balsamic vinegar

1-2 olive oil

A small handful of fresh basil (roughly chopped)

Pinch of salt and pepper

And some bread: baguette or pane de casa or sourdough - thinly sliced

HOW TO MAKE IT

Let's talk about Lesley's heavenly little gem that is bruschetta! This easy-to-make appetizer is perfect for impressing your guests or just treating yourself to a little slice of heaven.


1. Let's start with the bread:

Pop slices of bread in the oven and lightly toast them up to perfection. Now, this is where the magic happens - take a whole garlic clove and rub it all over the toasted bread slices. It's like giving your bread a garlic hug!


2. Moving on to the tomato mixture:

Mix together those fresh and tasty tomatoes, basil, balsamic vinegar, olive oil, and a splash of lemon juice in a bowl. Give it a good mix, then add some crushed garlic and a pinch of salt and pepper to really make those flavors sing.


3. Now, the grand finale:

Place that delicious tomato mixture on top of your garlic-rubbed slices of bread. Want to take it up a notch? Add some shredded mozzarella or parmesan cheese for an extra burst of flavor. Then, pop it in the oven for about 10 minutes at 180°C (350F) until the cheese is melty and gooey.
