Vegetarian Spaghetti Bolognese – super delicious!

Alright, let's talk about the crowd-pleaser dish - Vegetarian Spaghetti Bolognese! It's so tasty and packed with flavour, you'll think you're dining in a fancy Italian restaurant. And now, it's a family favourite - I must have been channelling my Italian ancestors from Pisa when I first made this dish!

Time: 40 mins | Serves: 4


2 tablespoons olive oil

1 large onion (finely chopped)

3 cloves of garlic (crushed or finely chopped)

2 celery sticks (peeled and finely chopped)

3 carrots (washed and finely chopped)

400g plant-based vegan mince

2x 400g tinned crushed tomatoes

Fresh basil leaves (small handful)

1L vegetable stock cube

100ml red wine

2x dried bay leaves

1 tablespoon dried oregano

1 tablespoon dried rosemary

1 tablespoon concentrated tomato paste

2 handfuls of grated parmesan

400g spaghetti (we used spaghetti pasta size number 10)

* If you're a meat eater, you can substitute the vegan mince for beef mince!


The Bolognese:

1. Heat up your pan and start sautéing those onions in oil - it's like a dance party in the kitchen! Then sauté the garlic, and why not keep dancing?

2. Add the vegan mince and give it a good stir, separating it like you're dealing with a bunch of gossiping relatives.

3. Toss in the carrot, celery, oregano, rosemary, and tomato paste - it's a flavor explosion, like fireworks on your tongue!

4. Now it's time to add the tinned tomatoes, basil, bay leaves, stock cube, red wine, and chili - it's like a party in your mouth and everyone's invited!

5. Let it all simmer for 25 minutes, stirring from time to time - it's like a slow dance, building up to a crescendo of flavor.

6. In the final 5 minutes, add in a handful of grated parmesan - because who doesn't love a cheesy surprise at the end? DE-LI-CIOUS!

The Spaghetti: (see video below)

1. While your Bolognese is simmering away, start boiling some water with a splash of olive oil and a sprinkle of salt - it's like a mini vacation to Italy!

2. Once the water is boiling, drop in your pasta and give it a good stir, like you're conducting an orchestra.

3. Let it simmer on medium heat for 8-10 minutes, like it's soaking up all the Italian sunshine.

4. Taste test a spaghetti to see if it's "al dente," then drain - because we don't want any soggy noodles here!
